5-Ingredient Energy Bites

 

If you have been looking for a quick and easy meal-prep snack that doesn’t break the bank, look no further. These five ingredient, no-bake energy bites are the perfect option. 

As I come up on my year mark of working at Equinox The Loop, I am also coming up on the year mark of buying the Freshii Energii Bites every. single. day. They are delicious, filled with protein, healthy fats, and give me the energy I need to finish my shift or jump into a workout after.

Considering the unfortunate amount of money I have probably spent on these at Freshii over the past year, I figured it was about time I make them myself. However, knowing me, I had to tweak the recipe juuuuust a little. Since Freshii does not give away their official ingredients and measurements, I decided to play around with it.

First, I chose an unsalted and unsweetened peanut butter because it is just peanuts and SUPER drippy, which is perfect for baking (something I learned from Monique over at Ambitious Kitchen). Choosing an unsweetened peanut butter cuts out any additional sugars that we do not need, especially since the chocolate chips and honey will be sweetening the recipe!

Second, I chose to use less honey than I imagine that Freshii uses. My version of the recipe is a little dry compared to Freshii’s because of this, but that also means less sugar per bite. Obviously the sugar in this recipe is completely natural, coming from honey, but it is still important to watch how much you are consuming daily. For small energy bites like these, it can be easy to over-do it!

 

With only five ingredients and the fact that they are no-bake, I swear a kindergartener could make these. That is how SIMPLE this recipe is.

  • 2 cups Quick Oats
  • 1 cup Mini Dark Chocolate Chips
  • 1 1/2 cup Peanut Butter Unsalted and unsweetened
  • 4 tbsp Honey
  • 1/2 cup Shredded Coconut Unsweetened

  • 2 cups Quick Oats
  • 1 cup Mini Dark Chocolate Chips
  • 1 1/2 cup Peanut Butter Unsalted and unsweetened
  • 4 tbsp Honey
  • 1/2 cup Shredded Coconut Unsweetened
Instructions
  1. In a large mixing bowl, mix the oats, dark chocolate chips, peanut butter, and honey until well combined.
  2. Using a table spoon, form the dough into small, bite-sized balls. Roll balls in shredded coconut until completely covered.
  3. Place finished product on a lined baking sheet and chill in fridge for 1 hour. Store finished energy bites in an airtight container for up to 1 week.
